Mediterranean Lamb Burgers

Serves 4

  • 1 lb. ground lamb
  • 2/3 cup finely chopped red onion
  • 1/3 cup crumbled feta
  • 10 Kalamata olives, chopped
  • 1 garlic clove, pressed
  • 1/2 tsp. rosemary
  • 1/2 tsp. Kosher salt
  • Fresh ground black pepper
  • 1 1/2 tsp. olive oil

Thoroughly combine ingredients and shape into 4 patties, about 1″ thick. Grill or fry until cooked through, about 5 minutes per side. We like these served on toasted Ciabatta rolls.
